Instant Pot-PC or Wok-Eggroll in a Bowl

Easy, only a few ingredients

I use lean ground Turkey. You could also add egg, green or red peppers, bamboo sprouts, water chestnuts or whatever else you like in your eggrolls.


Servings -4


Ingredients

  • 1 lb lean ground Turkey or other meats, sausage or beef, shrimp.

  • 1 bag dry tri -colored coleslaw mix (shredded cabbage and carrots)

  • 5 cloves garlic, minced or garlic powder to taste

  • 1 tsp ground ginger

  • 1/2 cup soy sauce  * can use low sodium or liquid aminos or coconut aminos

  • sliced green or regular onion


* I used half of a red onion, in the recipe in this picture because that is what I had on hand.



Steps

  1. **For pressure cooker PC 0-1 minutes

  2. brown turkey or meat (and onion if not using the green onion,) in the pressure cooker pot, on saute or brown option.

  3. Drain the grease when browned

  4. *IP - Once Turkey or meat is cooked through, add the soy sauce first then add the coleslaw mix to pressure cooker.

  5. Put lid on pressure cooker and set on high for 0 minutes. (If your pressure cooker won't let you use 0 then use 1 minute)

  6. Do a quick release when time is up.

  7. *Don't let it sit in PC too long the cabbage will keep cooking and it's best a lil crunchy but wilted.

  8. Stir well

  9. Serve with sliced green onion on top.












For on the stove top method.

  1. In a large, deep skillet or wok, brown turkey or sausage or meat.

  2. Meanwhile in a small bowl, combine garlic, soy sauce, and ginger; set aside.

  3. Once  meat is cooked through, add dry coleslaw mix to skillet and stir to combine.

  4. Pour soy sauce mixture into the skillet and stir, continuing to cook over medium heat for about 5 minutes or until cabbage is wilted, but still a bit crunchy.

  5. Serve with sliced green onion on top.
